Ingredients:
- 8 oz (225g) ground beef (at least 80% lean)
- 1 tbsp taco seasoning (homemade or store-bought)
- 1/4 cup (60ml) water
- 2 large flour tortillas (approx. 10-12 inches/25-30cm diameter)
- 2 tbsp olive oil
- 1 cup (240g) refried beans (canned or homemade)
- 1 cup (110g) shredded cheddar cheese
- 1/2 cup (55g) shredded Monterey Jack cheese
- 1/2 cup (75g) diced tomatoes
- 1/4 cup (15g) shredded lettuce
- 1/4 cup (60g) sour cream
- 2 tbsp sliced black olives (optional)
- 2 tbsp sliced green onions (optional)
- Hot sauce, to taste (optional)
Instructions:
- Sauté ground beef in a skillet over medium heat until browned. Drain any excess fat. Stir in taco seasoning and water. Simmer until the water is absorbed. Set aside.
- Brush both sides of each tortilla with olive oil.
- Bake Tortillas on each side for approximately 5 minutes, and remove from heat.
- Spread refried beans evenly over one tortilla. Top with the seasoned beef. Sprinkle with cheddar and Monterey Jack cheese. Place the second baked tortilla on top.
- Place the assembled pizza on the baking sheet and bake until the cheese is melted and bubbly, about 5-7 minutes.
- Remove from oven. Top with diced tomatoes, shredded lettuce, sour cream, olives, and green onions. Cut into wedges and serve immediately.
