Ingredients:

  • 8 oz (225g) ground beef (at least 80% lean)
  • 1 tbsp taco seasoning (homemade or store-bought)
  • 1/4 cup (60ml) water
  • 2 large flour tortillas (approx. 10-12 inches/25-30cm diameter)
  • 2 tbsp olive oil
  • 1 cup (240g) refried beans (canned or homemade)
  • 1 cup (110g) shredded cheddar cheese
  • 1/2 cup (55g) shredded Monterey Jack cheese
  • 1/2 cup (75g) diced tomatoes
  • 1/4 cup (15g) shredded lettuce
  • 1/4 cup (60g) sour cream
  • 2 tbsp sliced black olives (optional)
  • 2 tbsp sliced green onions (optional)
  • Hot sauce, to taste (optional)

Instructions:

  1. Sauté ground beef in a skillet over medium heat until browned. Drain any excess fat. Stir in taco seasoning and water. Simmer until the water is absorbed. Set aside.
  2. Brush both sides of each tortilla with olive oil.
  3. Bake Tortillas on each side for approximately 5 minutes, and remove from heat.
  4. Spread refried beans evenly over one tortilla. Top with the seasoned beef. Sprinkle with cheddar and Monterey Jack cheese. Place the second baked tortilla on top.
  5. Place the assembled pizza on the baking sheet and bake until the cheese is melted and bubbly, about 5-7 minutes.
  6. Remove from oven. Top with diced tomatoes, shredded lettuce, sour cream, olives, and green onions. Cut into wedges and serve immediately.
