Ingredients:
- 1 pound (454g) ground beef (80/20 or leaner)
- 1 packet (1 ounce/28g) taco seasoning
- ½ cup (120ml) water
- 1 tablespoon (15ml) vegetable oil
- 1 small onion, finely chopped (about ½ cup)
- 2 cloves garlic, minced
- 4 large (10-inch/25cm) flour tortillas
- 2 tablespoons (30ml) vegetable oil, for frying
- 1 (16 ounce/454g) can refried beans
- 2 tablespoons (30ml) sour cream
- 2 cups (225g) shredded cheddar cheese
- ½ cup (50g) shredded Monterey Jack cheese (optional)
- 1 cup (113g) chopped tomatoes
- ½ cup (75g) thinly sliced green onions
- ¼ cup (15g) black olives, sliced
- Sour cream (optional, for serving)
- Guacamole (optional, for serving)
- Hot sauce (optional, for serving)
Instructions:
- Brown ground beef in a large skillet with oil over medium-high heat, breaking it up with a spatula. Drain off any excess grease. Add chopped onion and cook until softened. Stir in minced garlic, taco seasoning, and water. Simmer until the sauce thickens slightly.
- Heat vegetable oil in a large skillet over medium heat. Fry each tortilla until lightly golden brown and crispy, about 1-2 minutes per side. Drain on paper towels.
- Preheat oven to 375°F (190°C). Mix refried beans with sour cream. Spread the bean mixture evenly over two of the fried tortillas. Top with the seasoned ground beef. Sprinkle with cheddar and Monterey Jack cheeses. Top with the remaining two fried tortillas. Sprinkle remaining cheese.
- Bake in the preheated oven for 8-10 minutes, or until the cheese is melted and bubbly.
- Remove from oven and top with chopped tomatoes, green onions, and black olives. Cut into wedges and serve immediately with your favorite toppings like sour cream, guacamole, and hot sauce.
