Ingredients:
- 1 tablespoon olive oil (15 ml)
- 1 pound boneless, skinless chicken breasts, cut into thin strips (450g)
- 1 packet (1 ounce) fajita seasoning (28g)
- 1 large red bell pepper, thinly sliced
- 1 large yellow bell pepper, thinly sliced
- 1 large onion, thinly sliced
- 1 clove garlic, minced
- 1 tablespoon lime juice (15ml)
- 1 large bag (10-12 ounces) tortilla chips (300-350g)
- 2 cups shredded cheddar cheese (225g)
Instructions:
- Toss chicken strips with fajita seasoning in a bowl.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through (internal temperature reaches 165°F/74°C), about 5-7 minutes. Remove chicken from skillet and set aside.
- Add sliced bell peppers and onion to the same skillet. Cook until softened and slightly caramelized, about 8-10 minutes. Add minced garlic during the last minute of cooking.
- Return cooked chicken to the skillet with the vegetables. Stir in lime juice and heat through.
- Spread tortilla chips in a single layer on a baking sheet.
- Sprinkle half of the cheese evenly over the chips. Top with chicken fajita mixture, then sprinkle with the remaining cheese.
- Bake in a preheated oven at 350°F (175°C) for 5-7 minutes, or until the cheese is melted and bubbly.
- Remove from oven and garnish with your favorite toppings (sour cream, guacamole, jalapenos, etc.). Serve immediately.
