Ingredients:
- 1 tablespoon olive oil (15 ml)
- 1 pound ground turkey or lean ground pork (454g)
- 1 medium onion, finely chopped (approx. 1 cup)
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon red pepper flakes (optional, for heat)
- 1 (14-ounce) bag coleslaw mix (397g)
- 1 (8-ounce) can water chestnuts, drained and sliced (227g)
- 2 green onions, thinly sliced
- 1/4 cup low-sodium soy sauce (60 ml)
- 2 tablespoons rice vinegar (30 ml)
- 1 tablespoon sesame oil (15 ml)
- 1 tablespoon honey or maple syrup (15 ml)
- 1 teaspoon cornstarch (5 ml)
- 2 tablespoons water (30ml)
Instructions:
- In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey (or maple syrup), cornstarch, and water until smooth. Set aside.
- Heat olive oil in a large skillet or wok over medium-high heat. Add onion and cook until softened, about 3-5 minutes. Add garlic, ginger, and red pepper flakes (if using) and cook for 1 minute more, until fragrant.
- Add ground turkey or pork to the skillet and cook, breaking it up with a spoon, until browned and cooked through. Drain off any excess grease.
- Stir in the coleslaw mix and water chestnuts. Cook until the coleslaw is slightly softened, about 3-5 minutes.
- Pour the sauce over the mixture in the skillet. Bring to a simmer and cook until the sauce has thickened slightly and coats all the ingredients, about 1-2 minutes.
- Remove from heat. Stir in the sliced green onions. Serve immediately. Enjoy your weight watchers egg roll in a bowl.
