Ingredients:
- 3 medium overripe bananas, mashed (approx. 1.5 cups)
- 1/2 cup (115g) unsalted butter, melted and cooled slightly
- 3/4 cup (150g) granulated white sugar
- 1 large egg, room temperature and beaten
- 1 tsp pure vanilla extract
- 1.5 cups (190g) all-purpose flour
- 1 tsp baking soda
- 1/4 tsp fine sea salt
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan thoroughly with butter or non stick spray.
- In a large mixing bowl, mash the 3 bananas with a fork until they reach a chunky liquid consistency. Note: A few small lumps are fine, but you want it mostly fluid.
- Pour the melted butter into the mashed bananas and stir until fully incorporated.
- Whisk in the 3/4 cup sugar, the beaten egg, and the 1 tsp vanilla extract until the mixture appears glossy and smooth.
- Sprinkle the 1 tsp baking soda and 1/4 tsp salt directly over the wet base and stir well to ensure even distribution.
- Add the 1.5 cups of all purpose flour to the bowl.
- Gently fold the flour into the mixture using a spatula until no white streaks remain. Note: Stop the moment the flour disappears to avoid overworking the gluten.
- Pour the batter into the prepared loaf pan, smoothing the top with your spatula.
- Bake for 60 to 65 minutes, checking for doneness with a toothpick at the 50 minute mark. The loaf is ready when the toothpick comes out clean or with just a few dry crumbs.
- Remove from the oven and let it sit in the pan for 10 minutes before transferring to a wire rack to cool completely.
