Ingredients:
- 8 ounces (225g) feta cheese, crumbled
- 1/4 cup (60ml) extra virgin olive oil
- 1/4 cup (60ml) plain Greek yogurt
- 2 tablespoons fresh lemon juice
- 1 clove garlic, minced
- 1/4 cup (packed) fresh mint leaves, roughly chopped
- 1/4 cup (packed) fresh dill, roughly chopped
- 1/4 teaspoon red pepper flakes (optional)
- Freshly ground black pepper to taste
Instructions:
- In the food processor, combine the crumbled feta, olive oil, Greek yogurt, lemon juice, and minced garlic.
- Pulse until mostly smooth, scraping down the sides of the bowl as needed. Don't over-process; a little texture is good!
- Add the fresh mint, dill, and red pepper flakes (if using).
- Pulse a few more times to incorporate the herbs, but be careful not to pulverize them.
- Season with freshly ground black pepper to taste.
- Transfer to a serving bowl and chill for at least 30 minutes to allow the flavors to meld. This step is optional, but it definitely enhances the taste.
- Serve with your favorite dippers.
