Ingredients:

  • 8 ounces (225g) feta cheese, crumbled
  • 1/4 cup (60ml) extra virgin olive oil
  • 1/4 cup (60ml) plain Greek yogurt
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic, minced
  • 1/4 cup (packed) fresh mint leaves, roughly chopped
  • 1/4 cup (packed) fresh dill, roughly chopped
  • 1/4 teaspoon red pepper flakes (optional)
  • Freshly ground black pepper to taste

Instructions:

  1. In the food processor, combine the crumbled feta, olive oil, Greek yogurt, lemon juice, and minced garlic.
  2. Pulse until mostly smooth, scraping down the sides of the bowl as needed. Don't over-process; a little texture is good!
  3. Add the fresh mint, dill, and red pepper flakes (if using).
  4. Pulse a few more times to incorporate the herbs, but be careful not to pulverize them.
  5. Season with freshly ground black pepper to taste.
  6. Transfer to a serving bowl and chill for at least 30 minutes to allow the flavors to meld. This step is optional, but it definitely enhances the taste.
  7. Serve with your favorite dippers.
