Ingredients:
- 2 large, very ripe bananas, peeled and frozen solid
- 1/2 cup plain, unsweetened Greek yogurt (full-fat recommended)
- 1/4 cup natural, unsalted, xylitol-free peanut butter
- 1-2 Tbsp water or unsweetened, unsalted chicken/beef broth (for thinning)
Instructions:
- Ensure bananas are peeled, sliced into chunks, and completely frozen (at least 6 hours).
- Place frozen banana chunks, Greek yogurt, and peanut butter into a high-speed blender or powerful food processor.
- Pulse initially to break down the bananas, then process continuously until smooth and creamy. Stop and scrape down the sides as needed.
- If the mixture is too thick to blend smoothly, add the broth or water one tablespoon at a time until a soft-serve consistency is achieved. Do not over-liquidise.
- Transfer the mixture into a freezer-safe container (like a loaf pan) and smooth the top.
- After 2 hours in the freezer, remove the container and vigorously stir the mixture with a fork or spatula to break up any ice crystals. Return to the freezer.
- Freeze for an additional 4-6 hours, or until firm enough to scoop easily.
- Scoop immediately and serve in a bowl, or use silicone trays for portion control.
