Ingredients:

  • 2 large, very ripe bananas, peeled and frozen solid
  • 1/2 cup plain, unsweetened Greek yogurt (full-fat recommended)
  • 1/4 cup natural, unsalted, xylitol-free peanut butter
  • 1-2 Tbsp water or unsweetened, unsalted chicken/beef broth (for thinning)

Instructions:

  1. Ensure bananas are peeled, sliced into chunks, and completely frozen (at least 6 hours).
  2. Place frozen banana chunks, Greek yogurt, and peanut butter into a high-speed blender or powerful food processor.
  3. Pulse initially to break down the bananas, then process continuously until smooth and creamy. Stop and scrape down the sides as needed.
  4. If the mixture is too thick to blend smoothly, add the broth or water one tablespoon at a time until a soft-serve consistency is achieved. Do not over-liquidise.
  5. Transfer the mixture into a freezer-safe container (like a loaf pan) and smooth the top.
  6. After 2 hours in the freezer, remove the container and vigorously stir the mixture with a fork or spatula to break up any ice crystals. Return to the freezer.
  7. Freeze for an additional 4-6 hours, or until firm enough to scoop easily.
  8. Scoop immediately and serve in a bowl, or use silicone trays for portion control.
