Ingredients:
- 10 oz frozen chopped spinach, thawed and squeezed dry
- 0.5 cup yellow onion, finely diced
- 2 cloves garlic, minced
- 4 large eggs, room temperature
- 0.5 cup heavy cream
- 2 tbsp almond flour
- 0.5 tsp baking powder
- 0.5 cup feta cheese, crumbled
- 1.5 cups shredded mozzarella cheese, divided
- 1 pinch ground nutmeg
- 0.5 tsp salt
- 0.25 tsp black pepper
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9-inch pie dish or springform pan.
- Prepare the spinach by placing thawed greens in a clean kitchen towel and wringing it aggressively until no more liquid escapes.
- In a large mixing bowl, whisk the 4 eggs and heavy cream until well combined and no streaks remain.
- Slowly incorporate the almond flour, baking powder, nutmeg, salt, and pepper into the egg mixture, whisking until smooth.
- Stir in the dried spinach, diced onion, minced garlic, crumbled feta, and 1 cup of the shredded mozzarella.
- Pour the mixture into the prepared pie dish and sprinkle the remaining 0.5 cup of shredded mozzarella over the top.
- Bake for 35 minutes or until the center is set and the cheese surface has reached a golden-brown Maillard reaction finish.
