Ingredients:

  • 10 oz frozen chopped spinach, thawed and squeezed dry
  • 0.5 cup yellow onion, finely diced
  • 2 cloves garlic, minced
  • 4 large eggs, room temperature
  • 0.5 cup heavy cream
  • 2 tbsp almond flour
  • 0.5 tsp baking powder
  • 0.5 cup feta cheese, crumbled
  • 1.5 cups shredded mozzarella cheese, divided
  • 1 pinch ground nutmeg
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch pie dish or springform pan.
  2. Prepare the spinach by placing thawed greens in a clean kitchen towel and wringing it aggressively until no more liquid escapes.
  3. In a large mixing bowl, whisk the 4 eggs and heavy cream until well combined and no streaks remain.
  4. Slowly incorporate the almond flour, baking powder, nutmeg, salt, and pepper into the egg mixture, whisking until smooth.
  5. Stir in the dried spinach, diced onion, minced garlic, crumbled feta, and 1 cup of the shredded mozzarella.
  6. Pour the mixture into the prepared pie dish and sprinkle the remaining 0.5 cup of shredded mozzarella over the top.
  7. Bake for 35 minutes or until the center is set and the cheese surface has reached a golden-brown Maillard reaction finish.
