- 1/4 cup (60ml) freshly squeezed lemon juice (about 2 lemons)
- 2 tablespoons (30ml) olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- Fresh parsley, chopped (optional)
- Lemon wedges (optional)
Instructions:
- Season the chicken breasts with salt and pepper.
- In a mixing bowl, combine chicken broth, lemon juice, olive oil, minced garlic, thyme, and oregano.
- Place the chicken breasts in the slow cooker and pour the lemon sauce over the chicken, ensuring they are well-coated.
- Cover and cook on low for 4-6 hours or high for 2-3 hours. Check for doneness: chicken should reach an internal temperature of 165°F (74°C).
- Remove chicken from the pot and garnish with parsley and lemon wedges before serving.
