  • 1 cup (240ml) chicken broth
  • 1/4 cup (60ml) freshly squeezed lemon juice (about 2 lemons)
  • 2 tablespoons (30ml) olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional)
  • Lemon wedges (optional)

Instructions:

  1. Season the chicken breasts with salt and pepper.
  2. In a mixing bowl, combine chicken broth, lemon juice, olive oil, minced garlic, thyme, and oregano.
  3. Place the chicken breasts in the slow cooker and pour the lemon sauce over the chicken, ensuring they are well-coated.
  4. Cover and cook on low for 4-6 hours or high for 2-3 hours. Check for doneness: chicken should reach an internal temperature of 165°F (74°C).
  5. Remove chicken from the pot and garnish with parsley and lemon wedges before serving.
