Ingredients:

  • 1 cup (160g) Cream of Rice cereal
  • 4 cups (950ml) water or milk (or a combination)
  • 1/4 teaspoon salt
  • 1/2 cup (120ml) maple syrup or honey
  • 1/2 cup (75g) fresh berries (strawberries, blueberries, or raspberries)
  • 1/2 banana, sliced
  • 1/4 cup (30g) chopped nuts (walnuts, almonds, or pecans)
  • 1 tablespoon (15ml) nut butter (peanut butter, almond butter)
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup (60ml) yogurt or cottage cheese
  • 1 tablespoon (15g) chocolate chips or coconut flakes (optional)

Instructions:

  1. Gather all ingredients and equipment.
  2. In a medium saucepan, bring 4 cups of water or milk to a boil.
  3. Add salt and whisk in 1 cup of Cream of Rice cereal.
  4. Reduce heat to low, stirring frequently until thickened (about 5-7 minutes).
  5. Add a pinch of cinnamon, if desired.
  6. Remove from heat and let it sit for a minute to thicken further.
  7. While the rice is cooking, rinse berries and slice banana.
  8. Measure out nut butter and other toppings as desired.
  9. Spoon the Cream of Rice into bowls.
  10. Arrange your chosen toppings artfully on top.
  11. Drizzle with syrup or honey, if using.
