Ingredients:
- 1.5 lbs lean ground beef (90/10)
- 1 yellow onion, finely diced
- 2 cloves garlic, minced
- 15 oz canned whole kernel corn, drained
- 15 oz canned black beans, rinsed and drained
- 10.5 oz condensed cream of mushroom soup
- 0.5 cup sour cream
- 1 tsp smoked paprika
- 0.5 tsp chili powder
- 2 cups sharp cheddar cheese, shredded
- 28 oz frozen tater tots
- 1 tbsp fresh chives, chopped
Instructions:
- Preheat your oven to 190°C (375°F). In a 12-inch skillet over medium-high heat, brown the ground beef with the diced onions until the beef is deeply browned and onions are translucent.
- Drain all excess fat from the skillet to ensure a crisp finished product. Stir in the minced garlic and cook for 60 seconds until fragrant.
- Reduce heat to low. Stir in the drained corn, rinsed beans, condensed soup, sour cream, smoked paprika, and chili powder. Mix until the sauce is emulsified and the beef is evenly coated.
- Transfer the mixture into a 9x13-inch baking dish. Spread it into an even layer using a rubber spatula.
- Sprinkle the shredded sharp cheddar cheese evenly over the beef mixture. Arrange the frozen tater tots in a single layer on top, leaving slight gaps for air circulation.
- Bake for 30 minutes, or until the tater tots are golden brown and the edges are bubbling. Garnish with chopped chives before serving.
