Ingredients:

  • 4 ears of fresh corn, husks and silk removed (or 4 cups frozen corn, thawed)
  • 1 tablespoon olive oil (15 ml)
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup mayonnaise (120 ml)
  • 1/4 cup sour cream (60 ml)
  • 1/4 cup crumbled Cotija cheese or Feta (30 g)
  • 1 tablespoon lime juice, freshly squeezed (15 ml)
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 cup chopped fresh cilantro (coriander)

Instructions:

  1. Brush corn with olive oil and season with salt and pepper. If using frozen corn, pat it dry.
  2. Grill corn over medium-high heat, turning occasionally, until kernels are lightly charred and tender (about 8-10 minutes). Or, pan-fry in a skillet over medium heat until lightly browned. If using frozen corn, pan fry or oven roast with oil and seasonings until warmed through and lightly toasted.
  3. In a mixing bowl, combine mayonnaise, sour cream, Cotija/Feta cheese, lime juice, chili powder, and garlic powder. Mix well.
  4. Spread the sauce evenly over the cooked corn.
  5. Sprinkle with chopped cilantro.
