Ingredients:
- 4 ears of fresh corn, husks and silk removed (or 4 cups frozen corn, thawed)
- 1 tablespoon olive oil (15 ml)
- Salt and freshly ground black pepper, to taste
- 1/2 cup mayonnaise (120 ml)
- 1/4 cup sour cream (60 ml)
- 1/4 cup crumbled Cotija cheese or Feta (30 g)
- 1 tablespoon lime juice, freshly squeezed (15 ml)
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 cup chopped fresh cilantro (coriander)
Instructions:
- Brush corn with olive oil and season with salt and pepper. If using frozen corn, pat it dry.
- Grill corn over medium-high heat, turning occasionally, until kernels are lightly charred and tender (about 8-10 minutes). Or, pan-fry in a skillet over medium heat until lightly browned. If using frozen corn, pan fry or oven roast with oil and seasonings until warmed through and lightly toasted.
- In a mixing bowl, combine mayonnaise, sour cream, Cotija/Feta cheese, lime juice, chili powder, and garlic powder. Mix well.
- Spread the sauce evenly over the cooked corn.
- Sprinkle with chopped cilantro.
