Ingredients:

  • 2 cans (15 oz / 425g each) black beans, drained and rinsed
  • 1/2 cup (60g) red onion, finely diced
  • 2 cloves (6g) garlic, minced
  • 1/4 cup (15g) fresh cilantro, chopped
  • 1/2 cup (60g) panko breadcrumbs
  • 1 tbsp (15ml) olive oil
  • 1 tsp (5g) ground cumin
  • 1 tsp (5g) smoked paprika
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) black pepper
  • 1 tbsp (15ml) lime juice
  • 2 tbsp (30ml) olive oil for frying

Instructions:

  1. Preheat oven to 350°F (175°C). Spread rinsed black beans on a baking sheet and roast for 10–12 minutes until slightly cracked. Transfer to a bowl and mash with a potato masher or pulse in a food processor until coarsely smashed.
  2. Stir in diced onion, garlic, and cilantro. Add panko breadcrumbs, cumin, smoked paprika, salt, pepper, and lime juice. Mix firmly until the dough is tacky and holds together.
  3. Divide the mixture into 8 equal portions and form into 3-inch patties, pressing firmly to ensure they are compact.
  4. Heat 2 tbsp of oil in a skillet over medium-high heat. Once shimmering, add patties and cook for 4–5 minutes per side without moving them until a deep brown crust forms.
