Ingredients:
- 2 cans (15 oz / 425g each) black beans, drained and rinsed
- 1/2 cup (60g) red onion, finely diced
- 2 cloves (6g) garlic, minced
- 1/4 cup (15g) fresh cilantro, chopped
- 1/2 cup (60g) panko breadcrumbs
- 1 tbsp (15ml) olive oil
- 1 tsp (5g) ground cumin
- 1 tsp (5g) smoked paprika
- 1/2 tsp (3g) salt
- 1/4 tsp (1g) black pepper
- 1 tbsp (15ml) lime juice
- 2 tbsp (30ml) olive oil for frying
Instructions:
- Preheat oven to 350°F (175°C). Spread rinsed black beans on a baking sheet and roast for 10–12 minutes until slightly cracked. Transfer to a bowl and mash with a potato masher or pulse in a food processor until coarsely smashed.
- Stir in diced onion, garlic, and cilantro. Add panko breadcrumbs, cumin, smoked paprika, salt, pepper, and lime juice. Mix firmly until the dough is tacky and holds together.
- Divide the mixture into 8 equal portions and form into 3-inch patties, pressing firmly to ensure they are compact.
- Heat 2 tbsp of oil in a skillet over medium-high heat. Once shimmering, add patties and cook for 4–5 minutes per side without moving them until a deep brown crust forms.
