Ingredients:

  • 1 ½ cups (192g) all-purpose flour, plus extra for dusting
  • ¾ cup (150g) packed light brown sugar
  • ¾ teaspoon ground cinnamon
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup (1 ½ sticks/170g) cold unsalted butter, cut into small cubes
  • ½ cup (60g) rolled oats (old fashioned)
  • 4 medium apples (about 1 ½ pounds), peeled, cored, and diced
  • ¼ cup (50g) granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg

Instructions:

  1. Line the 9x13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. Combine flour, brown sugar, cinnamon, baking powder, and salt in a bowl.
  3. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Stir in the rolled oats.
  5. Reserve about 1 cup of the crumble mixture for the topping.
  6. Press the remaining crumble mixture firmly into the prepared baking pan to form the base.
  7. In a separate bowl, combine the diced apples, granulated sugar, flour, lemon juice, cinnamon, and nutmeg. Toss to coat.
  8. Spread the apple filling evenly over the crumble base.
  9. Sprinkle the reserved crumble topping evenly over the apple filling.
  10. Bake in a preheated oven at 375°F (190°C) for 35-40 minutes, or until the topping is golden brown and the apples are tender.
  11. Let the bars cool completely in the pan before lifting them out using the parchment paper overhang.
  12. Cut into squares and serve.
