Ingredients:
- 1 ½ cups (192g) all-purpose flour, plus extra for dusting
- ¾ cup (150g) packed light brown sugar
- ¾ teaspoon ground cinnamon
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ¾ cup (1 ½ sticks/170g) cold unsalted butter, cut into small cubes
- ½ cup (60g) rolled oats (old fashioned)
- 4 medium apples (about 1 ½ pounds), peeled, cored, and diced
- ¼ cup (50g) granulated sugar
- 2 tablespoons all-purpose flour
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
Instructions:
- Line the 9x13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- Combine flour, brown sugar, cinnamon, baking powder, and salt in a bowl.
- Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Stir in the rolled oats.
- Reserve about 1 cup of the crumble mixture for the topping.
- Press the remaining crumble mixture firmly into the prepared baking pan to form the base.
- In a separate bowl, combine the diced apples, granulated sugar, flour, lemon juice, cinnamon, and nutmeg. Toss to coat.
- Spread the apple filling evenly over the crumble base.
- Sprinkle the reserved crumble topping evenly over the apple filling.
- Bake in a preheated oven at 375°F (190°C) for 35-40 minutes, or until the topping is golden brown and the apples are tender.
- Let the bars cool completely in the pan before lifting them out using the parchment paper overhang.
- Cut into squares and serve.
