Ingredients:
- 1 ½ cups (192g) all-purpose flour
- ½ cup (45g) unsweetened cocoa powder
- ¾ cup (150g) granulated sugar
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup (120ml) vegetable oil
- 1 cup (240ml) buttermilk (or milk with 1 tbsp lemon juice/vinegar)
- 1 large egg, lightly beaten
- 1 teaspoon vanilla extract
- 1 cup (170g) semi-sweet chocolate chips
Instructions:
- Preheat oven to 375°F (190°C). Line muffin tin with liners or grease well.
- In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, baking powder, and salt until well combined.
- In a separate bowl, whisk together oil, buttermilk, egg, and vanilla extract.
- Pour wet ingredients into dry ingredients. Stir gently with a rubber spatula or wooden spoon until just combined. Don't overmix! A few lumps are okay.
- Gently fold in the chocolate chips.
- Fill muffin cups about 2/3 full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached.
- Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
