Ingredients:

  • 1 ½ cups (192g) all-purpose flour
  • ½ cup (45g) unsweetened cocoa powder
  • ¾ cup (150g) granulated sugar
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup (120ml) vegetable oil
  • 1 cup (240ml) buttermilk (or milk with 1 tbsp lemon juice/vinegar)
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Preheat oven to 375°F (190°C). Line muffin tin with liners or grease well.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, baking powder, and salt until well combined.
  3. In a separate bowl, whisk together oil, buttermilk, egg, and vanilla extract.
  4. Pour wet ingredients into dry ingredients. Stir gently with a rubber spatula or wooden spoon until just combined. Don't overmix! A few lumps are okay.
  5. Gently fold in the chocolate chips.
  6. Fill muffin cups about 2/3 full.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached.
  8. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
