Ingredients:
- 1 lb large strawberries
- 1 tsp granulated sugar
- 8 oz full-fat cream cheese, softened
- 0.5 cup powdered sugar, sifted
- 0.5 tsp vanilla bean paste
- 0.25 tsp fresh lemon zest
- 2 tbsp heavy whipping cream
- 2 graham crackers, crushed
- 1 oz dark chocolate, finely grated
- Fresh mint sprigs for garnish
Instructions:
- Wash and dry the 1 lb large strawberries thoroughly. Note: Any water left on the surface will prevent the garnish from sticking.
- Slice the green tops off to create a flat base. Stand the strawberry up on the flat end and slice it in half vertically.
- Use a small melon baller or a measuring spoon to gently scoop out a small well in the center of each strawberry half.
- Lightly sprinkle the interior with the 1 tsp granulated sugar. Wait 5 minutes until the berries look glossy.
- Beat the 8 oz softened cream cheese with the 0.5 cup powdered sugar until velvety and pale.
- Fold in the 0.25 tsp lemon zest, 0.5 tsp vanilla bean paste, and 2 tbsp heavy whipping cream.
- Whip the mixture for 2 minutes on high speed until it holds a stiff peak.
- Transfer the mixture to a piping bag and fill each strawberry well with a generous swirl.
- Crush the 2 graham crackers into fine crumbs and grate the 1 oz dark chocolate over the top.
- Garnish with a tiny mint leaf and serve immediately while the berries are crisp.
