- 2 cups (250g) all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- ½ cup (120ml) vegetable oil
- ½ cup (100g) granulated sugar
- ½ cup (100g) brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups (about 2 medium) peeled and diced apples (e.g., Granny Smith or Honeycrisp)
- 2 tablespoons (30g) melted butter (optional)
- 2 tablespoons (30g) sugar for sprinkling (optional)
Instructions:
- Preheat your oven to 350°F (175°C).
- Grease the loaf pan with butter or oil and line it with parchment paper for easy removal.
- In a bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt. Set aside.
- In another bowl, combine vegetable oil, granulated sugar, brown sugar, eggs, and vanilla. Whisk until fully incorporated.
- Gradually fold the dry ingredients into the wet mixture with a rubber spatula until just combined—don’t overmix!
- Gently fold in the diced apples until evenly distributed in the batter.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Drizzle melted butter over the top and sprinkle with sugar, if using.
- Place in the oven and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Once baked, let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
