Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ½ cup (120ml) vegetable oil
  • ½ cup (100g) granulated sugar
  • ½ cup (100g) brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups (about 2 medium) peeled and diced apples (e.g., Granny Smith or Honeycrisp)
  • 2 tablespoons (30g) melted butter (optional)
  • 2 tablespoons (30g) sugar for sprinkling (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Grease the loaf pan with butter or oil and line it with parchment paper for easy removal.
  3. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt. Set aside.
  4. In another bowl, combine vegetable oil, granulated sugar, brown sugar, eggs, and vanilla. Whisk until fully incorporated.
  5. Gradually fold the dry ingredients into the wet mixture with a rubber spatula until just combined—don’t overmix!
  6. Gently fold in the diced apples until evenly distributed in the batter.
  7. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  8. Drizzle melted butter over the top and sprinkle with sugar, if using.
  9. Place in the oven and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  10. Once baked, let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
