Ingredients:

  • 3 medium ripe bananas (about 1 ½ cups mashed, or 450g)
  • 1/3 cup (75g) unsalted butter, melted
  • 3/4 cup (150g) granulated sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (125g) all-purpose flour
  • 1/2 cup (60g) chopped walnuts or pecans (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C) and prepare the muffin tin by greasing or lining it with paper liners.
  2. Mash the bananas in a large bowl until smooth using a fork or potato masher.
  3. Mix in the melted butter.
  4. Combine the sugar, beaten egg, and vanilla extract into the banana mixture.
  5. Sprinkle the baking soda and salt over the mixture and blend.
  6. Add the flour gradually, stirring until just combined. Avoid overmixing to keep muffins tender.
  7. Fold in the chopped nuts if using.
  8. Divide the batter evenly among the prepared muffin cups.
  9. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  10. Cool in the pan for a few minutes before transferring to a wire rack to cool completely.
