Ingredients:
- 3 medium ripe bananas (about 1 ½ cups mashed, or 450g)
- 1/3 cup (75g) unsalted butter, melted
- 3/4 cup (150g) granulated sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup (125g) all-purpose flour
- 1/2 cup (60g) chopped walnuts or pecans (optional)
Instructions:
- Preheat the oven to 350°F (175°C) and prepare the muffin tin by greasing or lining it with paper liners.
- Mash the bananas in a large bowl until smooth using a fork or potato masher.
- Mix in the melted butter.
- Combine the sugar, beaten egg, and vanilla extract into the banana mixture.
- Sprinkle the baking soda and salt over the mixture and blend.
- Add the flour gradually, stirring until just combined. Avoid overmixing to keep muffins tender.
- Fold in the chopped nuts if using.
- Divide the batter evenly among the prepared muffin cups.
- Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for a few minutes before transferring to a wire rack to cool completely.
