Ingredients:
- 200g (7 oz) dark chocolate (70% cocoa or higher), chopped
- 3 large eggs, separated
- 50g (¼ cup) granulated sugar
- 300ml (1¼ cups) heavy cream
- 1 tsp vanilla extract
- Pinch of salt
Instructions:
- Place chopped chocolate in a heatproof bowl and set it over a double boiler or microwave. Stir until completely melted and smooth; set aside to cool slightly.
- In a separate bowl, whisk egg yolks with half the sugar until pale and thick.
- Gradually add the melted chocolate to the yolk mixture, stirring until well combined.
- In a clean bowl, whisk egg whites with a pinch of salt until soft peaks form. Gradually add the remaining sugar and continue whisking until stiff peaks form.
- In another bowl, whip heavy cream with vanilla until soft peaks form.
- Gently fold whipped cream into the chocolate mixture, then carefully fold in the egg whites until no white streaks remain.
- Spoon mousse into serving dishes and chill for at least 30 minutes.
- Serve chilled, garnished with fresh berries or chocolate shavings if desired.
