Ingredients:

  • 200g (7 oz) dark chocolate (70% cocoa or higher), chopped
  • 3 large eggs, separated
  • 50g (¼ cup) granulated sugar
  • 300ml (1¼ cups) heavy cream
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions:

  1. Place chopped chocolate in a heatproof bowl and set it over a double boiler or microwave. Stir until completely melted and smooth; set aside to cool slightly.
  2. In a separate bowl, whisk egg yolks with half the sugar until pale and thick.
  3. Gradually add the melted chocolate to the yolk mixture, stirring until well combined.
  4. In a clean bowl, whisk egg whites with a pinch of salt until soft peaks form. Gradually add the remaining sugar and continue whisking until stiff peaks form.
  5. In another bowl, whip heavy cream with vanilla until soft peaks form.
  6. Gently fold whipped cream into the chocolate mixture, then carefully fold in the egg whites until no white streaks remain.
  7. Spoon mousse into serving dishes and chill for at least 30 minutes.
  8. Serve chilled, garnished with fresh berries or chocolate shavings if desired.
