Ingredients:

  • 200g (7oz) dark chocolate (70% cocoa), chopped
  • 3 large eggs, separated
  • 50g (1/4 cup) granulated sugar
  • 1 pinch of salt
  • 200ml (3/4 cup) heavy cream, cold
  • 1 teaspoon vanilla extract
  • Whipped cream (for garnish, optional)
  • Chocolate shavings or cocoa powder (for garnish, optional)

Instructions:

  1. Place chopped chocolate in a heatproof bowl over a saucepan with simmering water. Stir until smooth, then remove from heat and let cool slightly.
  2. In a clean bowl, combine egg whites with a pinch of salt. Whip until soft peaks form, then gradually add sugar while whipping until stiff peaks form.
  3. In a separate bowl, whisk egg yolks into the cooled chocolate until well combined.
  4. Fold the whipped egg whites gently into the chocolate mixture in thirds, being careful not to deflate.
  5. In another bowl, whip cold heavy cream with vanilla until soft peaks form.
  6. Gently fold whipped cream into the chocolate mixture until combined.
  7. Spoon the mousse into serving glasses or ramekins and chill in the fridge for at least 30 minutes before serving.
  8. Garnish with whipped cream and chocolate shavings or cocoa powder if desired.
