Ingredients:
- 200g (7oz) dark chocolate (70% cocoa), chopped
- 3 large eggs, separated
- 50g (1/4 cup) granulated sugar
- 1 pinch of salt
- 200ml (3/4 cup) heavy cream, cold
- 1 teaspoon vanilla extract
- Whipped cream (for garnish, optional)
- Chocolate shavings or cocoa powder (for garnish, optional)
Instructions:
- Place chopped chocolate in a heatproof bowl over a saucepan with simmering water. Stir until smooth, then remove from heat and let cool slightly.
- In a clean bowl, combine egg whites with a pinch of salt. Whip until soft peaks form, then gradually add sugar while whipping until stiff peaks form.
- In a separate bowl, whisk egg yolks into the cooled chocolate until well combined.
- Fold the whipped egg whites gently into the chocolate mixture in thirds, being careful not to deflate.
- In another bowl, whip cold heavy cream with vanilla until soft peaks form.
- Gently fold whipped cream into the chocolate mixture until combined.
- Spoon the mousse into serving glasses or ramekins and chill in the fridge for at least 30 minutes before serving.
- Garnish with whipped cream and chocolate shavings or cocoa powder if desired.
