Ingredients:

  • 320g all-purpose flour
  • 15g cornstarch
  • 5g baking soda
  • 2g fine sea salt
  • 225g unsalted butter, slightly softened
  • 200g granulated white sugar
  • 1 large egg
  • 10ml pure vanilla extract
  • 2ml almond extract
  • 0.5 cup heart sprinkles
  • 0.25 cup pink sanding sugar

Instructions:

  1. Preheat your oven to 175°C (350°F) and line two large baking sheets with parchment paper or silicone mats.
  2. In a large mixing bowl or stand mixer, beat the cool butter and granulated sugar until the mixture is pale and aerated, approximately 3 minutes.
  3. Add the egg, vanilla extract, and almond extract to the butter mixture, mixing until just combined.
  4. Sift in the flour, cornstarch, baking soda, and fine sea salt. Mix on low speed until the dough just comes together, ensuring not to overwork it.
  5. Scoop tablespoon sized balls of dough and roll them in the pink sanding sugar until fully coated and sparkling.
  6. Place the balls on the baking sheet and gently press a few extra heart sprinkles into the top of each one.
  7. Bake for 10 minutes until the edges are just barely set and the tops look matte. They should not be brown!
  8. Let the cookies rest on the hot pan for 5 minutes. Wait until they are firm enough to lift without bending.
  9. Transfer to a wire rack to cool completely. This is when the shatter texture develops on the edges of your Day Cookie.
