Ingredients:

  • 1 pint (454g) Cherry tomatoes, about 24, washed and dried
  • 8 ounces (227g) Fresh mozzarella balls (bocconcini), small size, drained well
  • 12 Fresh basil leaves, medium to large size, washed and dried
  • 4 ounces (113g) Prosciutto, thinly sliced
  • ¼ cup (60ml) Balsamic glaze
  • 1 tablespoon (15ml) extra virgin olive oil
  • Freshly ground black pepper, to taste
  • Wooden skewers (12), 6-8 inches long

Instructions:

  1. Halve cherry tomatoes. If desired, use a small heart-shaped cookie cutter to cut the mozzarella balls into heart shapes, or simply leave them whole.
  2. Thread each skewer in the following order: Cherry tomato half, mozzarella ball, basil leaf, rolled prosciutto, cherry tomato half.
  3. Arrange the assembled skewers on a serving platter.
  4. Drizzle the skewers with balsamic glaze.
  5. Sprinkle with freshly ground black pepper and drizzle with olive oil. Serve immediately or chill for later.
