Ingredients:

  • 1 cup (240ml) plain yogurt (full-fat or Greek yogurt for extra creaminess)
  • 1/2 cup (75g) cucumber, peeled, seeded, and finely diced
  • 1/4 cup (15g) fresh mint leaves, finely chopped
  • 1 tablespoon (15ml) lemon juice
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt (or to taste)
  • Pinch of cayenne pepper (optional, for a bit of a kick)
  • Fresh mint sprigs, for garnish (optional)

Instructions:

  1. Peel, seed, and finely dice the cucumber. Make sure you get rid of those seeds; nobody wants watery raita.
  2. Finely chop the fresh mint leaves.
  3. In a mixing bowl, combine the yogurt, diced cucumber, chopped mint, lemon juice, cumin, salt, and cayenne pepper (if using).
  4. Stir all ingredients together until well combined and smooth.
  5. For best flavor, cover the bowl and chill in the refrigerator for at least 30 minutes. This allows the flavors to meld together beautifully.
  6. Garnish with fresh mint sprigs (if desired) and serve chilled.
