Ingredients:
- 1 cup (240ml) plain yogurt (full-fat or Greek yogurt for extra creaminess)
- 1/2 cup (75g) cucumber, peeled, seeded, and finely diced
- 1/4 cup (15g) fresh mint leaves, finely chopped
- 1 tablespoon (15ml) lemon juice
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt (or to taste)
- Pinch of cayenne pepper (optional, for a bit of a kick)
- Fresh mint sprigs, for garnish (optional)
Instructions:
- Peel, seed, and finely dice the cucumber. Make sure you get rid of those seeds; nobody wants watery raita.
- Finely chop the fresh mint leaves.
- In a mixing bowl, combine the yogurt, diced cucumber, chopped mint, lemon juice, cumin, salt, and cayenne pepper (if using).
- Stir all ingredients together until well combined and smooth.
- For best flavor, cover the bowl and chill in the refrigerator for at least 30 minutes. This allows the flavors to meld together beautifully.
- Garnish with fresh mint sprigs (if desired) and serve chilled.
