Ingredients:
- 2 English cucumbers, thinly sliced (about 4 cups / 500g)
- 4 ounces (115g) feta cheese, crumbled
- 1/4 cup (30g) red onion, thinly sliced
- 2 tablespoons fresh dill, chopped
- 3 tablespoons extra virgin olive oil (45ml)
- 2 tablespoons lemon juice, freshly squeezed (30ml)
- 1 teaspoon Dijon mustard (5g)
- 1/2 teaspoon garlic powder (2g)
- Salt and freshly ground black pepper to taste
Instructions:
- Wash and thinly slice the cucumbers. If using regular cucumbers, consider salting them lightly and letting them drain for 15 minutes to remove excess water.
- In a large mixing bowl, gently combine the sliced cucumbers, crumbled feta cheese, and thinly sliced red onion.
- In a small bowl or jar, whisk together the olive oil, lemon juice, Dijon mustard, garlic powder, salt, and pepper. Give it a good shake or whisk to emulsify.
- Pour the dressing over the cucumber mixture and gently toss to coat evenly.
- For best flavor, cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
- Just before serving, stir in the chopped fresh dill. Serve immediately or chilled.
