Ingredients:

  • cups Rolled Oats (Old Fashioned)
  • cup Raw Sliced Almonds
  • cup Raw Pecans or Walnuts (roughly chopped)
  • /2 cup Shredded Unsweetened Coconut
  • teaspoon Ground Cinnamon
  • /2 teaspoon Fine Sea Salt
  • /2 cup Honey or Maple Syrup
  • /3 cup Coconut Oil (melted)
  • teaspoon Vanilla Extract
  • cup Dried Cranberries or Raisins (added post-bake)
  • /4 cup Cacao Nibs (Optional, added post-bake)

Instructions:

  1. Preheat oven to 300°F (150°C). Line a large rimmed baking sheet with parchment paper.
  2. In a large bowl, thoroughly mix the oats, nuts, coconut (if using), cinnamon, and salt.
  3. Gently warm the honey/maple syrup and coconut oil in a small bowl or saucepan until liquid and fully combined. Stir in the vanilla extract. Do not let it boil.
  4. Pour the wet mixture over the dry ingredients. Use a spatula to gently fold and toss until every flake is lightly coated.
  5. Spread the coated mixture evenly across the prepared baking sheet. Press lightly into a thin, single layer to encourage clumping.
  6. Bake for 15 minutes.
  7. Remove the tray, give the granola a gentle stir, and return to the oven for another 15–20 minutes, checking frequently until it achieves a deep, golden-brown colour.
  8. Remove from the oven. Do not touch or stir. Allow the granola to cool completely on the baking sheet (about 1 hour) to ensure maximum crunch and cluster formation.
  9. Once completely cool, break the granola into desired pieces. Stir in the dried fruit and cacao nibs (if using).
  10. Store in an airtight container at room temperature.
