Ingredients:

  • 2 pounds (907g) raw, green peanuts (in shell)
  • 1 cup (237 ml) kosher salt (or sea salt), plus more to taste
  • 8-12 cups (1.9L-2.8L) water (enough to completely cover the peanuts)

Instructions:

  1. Thoroughly rinse the raw peanuts under cold running water to remove any dirt or debris.
  2. Add the rinsed peanuts to the slow cooker.
  3. Pour the salt over the peanuts, then add enough water to completely submerge them. They'll float a bit at first, that's perfectly normal.
  4. Cover the slow cooker and cook on high for 8-12 hours, or until the peanuts have reached your desired level of softness. Check the water level periodically, adding more water if needed to keep the peanuts submerged.
  5. After 8 hours, test a peanut for doneness. If they are not soft enough, continue cooking, checking every hour.
  6. Once the peanuts are cooked to your liking, turn off the slow cooker and let them soak in the hot, salty water for another 30 minutes to an hour for even more flavor. This is a pro move to intensify the flavour.
  7. Drain the peanuts in a colander and serve them warm. Be careful, they'll be hot!
