Ingredients:

  • 1 pound fresh salmon fillet, skin removed, diced into 1-inch cubes
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 cup panko breadcrumbs
  • 1/4 cup all-purpose flour
  • 1 large egg, beaten
  • Oil for frying (vegetable or canola)
  • 1/2 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • 1 teaspoon hot sauce (optional)
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine diced salmon, olive oil, garlic, smoked paprika, salt, pepper, and dill. Mix gently until combined.
  2. In one bowl, place the flour. In a second bowl, add the beaten egg. In a third bowl, fill with panko breadcrumbs.
  3. Take a piece of salmon, coat it in flour, dip in egg, and then roll in panko until fully covered. Repeat for all salmon pieces.
  4. In a skillet, heat about 1/2 inch of oil over medium heat until shimmering (about 350°F/175°C).
  5. Carefully place the breaded salmon in the hot oil, cooking in batches if necessary. Fry for 2-3 minutes on each side or until golden brown. Use a slotted spoon to remove and drain on paper towels.
  6. In a small bowl, mix together Greek yogurt, lemon juice, honey, hot sauce (if using), salt, and pepper.
  7. Plate the crispy salmon bites with the dipping sauce on the side.
