Ingredients:
- 1 pound fresh salmon fillet, skin removed, diced into 1-inch cubes
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 1 cup panko breadcrumbs
- 1/4 cup all-purpose flour
- 1 large egg, beaten
- Oil for frying (vegetable or canola)
- 1/2 cup Greek yogurt
- 1 tablespoon lemon juice
- 1 teaspoon honey
- 1 teaspoon hot sauce (optional)
- Salt and pepper to taste
Instructions:
- In a large bowl, combine diced salmon, olive oil, garlic, smoked paprika, salt, pepper, and dill. Mix gently until combined.
- In one bowl, place the flour. In a second bowl, add the beaten egg. In a third bowl, fill with panko breadcrumbs.
- Take a piece of salmon, coat it in flour, dip in egg, and then roll in panko until fully covered. Repeat for all salmon pieces.
- In a skillet, heat about 1/2 inch of oil over medium heat until shimmering (about 350°F/175°C).
- Carefully place the breaded salmon in the hot oil, cooking in batches if necessary. Fry for 2-3 minutes on each side or until golden brown. Use a slotted spoon to remove and drain on paper towels.
- In a small bowl, mix together Greek yogurt, lemon juice, honey, hot sauce (if using), salt, and pepper.
- Plate the crispy salmon bites with the dipping sauce on the side.
