Ingredients:

  • 1 can (15 oz / 425g) black beans, rinsed and patted dry
  • 1/4 cup (60ml) finely diced yellow onion
  • 1 clove (3g) garlic, minced
  • 1/2 cup (60g) Panko breadcrumbs
  • 1 large (50g) egg, beaten
  • 1/4 cup (30g) grated Parmesan cheese
  • 1/2 tsp (2g) ground cumin
  • 1/4 tsp (1g) smoked paprika
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) black pepper
  • 2 tbsp (30ml) olive oil

Instructions:

  1. Drain and rinse the black beans thoroughly, then pat them dry with a paper towel. In a mixing bowl, mash the beans until mostly smooth, leaving a few whole beans for texture.
  2. Stir in the diced onion, minced garlic, cumin, paprika, salt, and pepper. Fold in the beaten egg and Panko breadcrumbs, mixing until the dough is cohesive and tacky.
  3. Heat olive oil in a skillet over medium heat. Scoop approximately 2 tbsp (30ml) of mixture per patty and flatten slightly with a spatula.
  4. Fry for 3-4 minutes per side until the fritters reach a deep mahogany color and feel springy when pressed.
