Ingredients:
- 1 can (15 oz / 425g) black beans, rinsed and patted dry
- 1/4 cup (60ml) finely diced yellow onion
- 1 clove (3g) garlic, minced
- 1/2 cup (60g) Panko breadcrumbs
- 1 large (50g) egg, beaten
- 1/4 cup (30g) grated Parmesan cheese
- 1/2 tsp (2g) ground cumin
- 1/4 tsp (1g) smoked paprika
- 1/2 tsp (3g) salt
- 1/4 tsp (1g) black pepper
- 2 tbsp (30ml) olive oil
Instructions:
- Drain and rinse the black beans thoroughly, then pat them dry with a paper towel. In a mixing bowl, mash the beans until mostly smooth, leaving a few whole beans for texture.
- Stir in the diced onion, minced garlic, cumin, paprika, salt, and pepper. Fold in the beaten egg and Panko breadcrumbs, mixing until the dough is cohesive and tacky.
- Heat olive oil in a skillet over medium heat. Scoop approximately 2 tbsp (30ml) of mixture per patty and flatten slightly with a spatula.
- Fry for 3-4 minutes per side until the fritters reach a deep mahogany color and feel springy when pressed.
