Ingredients:

  • 2 large sweet potatoes (about 1 ½ pounds / 680g), peeled and cut into ½-inch / 1.25cm thick fries
  • 2 tablespoons olive oil (30ml)
  • 1 tablespoon cornstarch (15ml)
  • 1 teaspoon paprika (5ml)
  • ½ teaspoon garlic powder (2.5ml)
  • ½ teaspoon onion powder (2.5ml)
  • ½ teaspoon salt (2.5ml), or to taste
  • ¼ teaspoon black pepper (1.25ml), or to taste

Instructions:

  1. Place sweet potato fries in a large bowl and cover with cold water. Soak for at least 30 minutes (up to 2 hours) to remove excess starch.
  2. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  3. Drain the sweet potato fries very well. Pat them completely dry with paper towels.
  4. In the same bowl, toss the dried sweet potato fries with olive oil, cornstarch, paprika, garlic powder, onion powder, salt, and pepper. Ensure the fries are evenly coated.
  5. Spread the fries in a single layer on the prepared baking sheet, making sure they aren't overcrowded.
  6. Bake for 15 minutes, then flip the fries and bake for another 10-15 minutes, or until golden brown and crispy.
  7. Remove from the oven and serve immediately with your favorite dipping sauce.
