Ingredients:
- 2 large sweet potatoes (about 1 ½ pounds / 680g), peeled and cut into ½-inch / 1.25cm thick fries
- 2 tablespoons olive oil (30ml)
- 1 tablespoon cornstarch (15ml)
- 1 teaspoon paprika (5ml)
- ½ teaspoon garlic powder (2.5ml)
- ½ teaspoon onion powder (2.5ml)
- ½ teaspoon salt (2.5ml), or to taste
- ¼ teaspoon black pepper (1.25ml), or to taste
Instructions:
- Place sweet potato fries in a large bowl and cover with cold water. Soak for at least 30 minutes (up to 2 hours) to remove excess starch.
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Drain the sweet potato fries very well. Pat them completely dry with paper towels.
- In the same bowl, toss the dried sweet potato fries with olive oil, cornstarch, paprika, garlic powder, onion powder, salt, and pepper. Ensure the fries are evenly coated.
- Spread the fries in a single layer on the prepared baking sheet, making sure they aren't overcrowded.
- Bake for 15 minutes, then flip the fries and bake for another 10-15 minutes, or until golden brown and crispy.
- Remove from the oven and serve immediately with your favorite dipping sauce.
