Ingredients:

  • 1 lb fresh Sugar Snap Peas, ends trimmed
  • 1 Tbsp Olive Oil
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Kosher Salt (or to taste)
  • Pinch of Black Pepper
  • 1/2 tsp Lemon Zest
  • 1 tsp Fresh Lemon Juice (for finishing)

Instructions:

  1. Wash and thoroughly dry the sugar snap peas. Trim off the tough stringy bit running along the seam of each pea. Ensuring they are completely dry is crucial.
  2. Preheat the air fryer unit to 380°F (195°C) for 3-5 minutes, if desired.
  3. In a large bowl, toss the dried peas with olive oil, garlic powder, kosher salt, and black pepper until lightly and evenly coated.
  4. Place the seasoned peas in the air fryer basket in a single layer. Do not overcrowd the basket; work in batches if necessary to ensure crisping.
  5. Air fry for 6 minutes, then shake the basket vigorously.
  6. Return to the air fryer for another 1–2 minutes, or until the peas are tender-crisp and show slight blistering/charring on the edges.
  7. Transfer the hot peas immediately to a clean serving bowl. Sprinkle with fresh lemon zest and drizzle with fresh lemon juice. Toss quickly and serve immediately.
