Ingredients:

  • 1 cup (125g) all-purpose flour
  • 1 1/4 cups (300ml) milk
  • 2 large eggs
  • 2 tablespoons (30ml) unsalted butter, melted, plus more for greasing the pan
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract (optional)

Instructions:

  1. In a mixing bowl, whisk together the flour and salt.
  2. Gradually whisk in the milk until smooth, ensuring no lumps remain.
  3. Add the eggs and vanilla extract (if using) and whisk until fully incorporated.
  4. Gently whisk in the melted butter.
  5. Heat a crêpe pan or non-stick skillet over medium heat. Lightly grease the pan with melted butter.
  6. Pour 1/4 cup of batter onto the hot pan, swirling the pan to spread the batter thinly and evenly.
  7. Cook for 1-2 minutes, or until the edges are golden brown and the underside is lightly browned. Flip the crêpe with a spatula and cook for another 1 minute on the other side.
  8. Transfer the cooked crêpe to a plate and repeat with the remaining batter, greasing the pan as needed.
  9. Serve immediately with your favorite sweet or savoury fillings.
