Ingredients:
- 1 cup (125g) all-purpose flour
- 1 1/4 cups (300ml) milk
- 2 large eggs
- 2 tablespoons (30ml) unsalted butter, melted, plus more for greasing the pan
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract (optional)
Instructions:
- In a mixing bowl, whisk together the flour and salt.
- Gradually whisk in the milk until smooth, ensuring no lumps remain.
- Add the eggs and vanilla extract (if using) and whisk until fully incorporated.
- Gently whisk in the melted butter.
- Heat a crêpe pan or non-stick skillet over medium heat. Lightly grease the pan with melted butter.
- Pour 1/4 cup of batter onto the hot pan, swirling the pan to spread the batter thinly and evenly.
- Cook for 1-2 minutes, or until the edges are golden brown and the underside is lightly browned. Flip the crêpe with a spatula and cook for another 1 minute on the other side.
- Transfer the cooked crêpe to a plate and repeat with the remaining batter, greasing the pan as needed.
- Serve immediately with your favorite sweet or savoury fillings.
