Ingredients:
- 8 oz (225 g) whole wheat spaghetti or soba noodles
- 1/4 cup (60 ml) tahini
- 3 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp honey or maple syrup
- 2 cloves garlic, minced
- 1 inch fresh ginger, grated
- 1 medium cucumber, julienned
- 1 red bell pepper, sliced
- 2 carrots, grated or julienned
- 1/4 cup chopped fresh cilantro
- 2 green onions, sliced
- 2 tbsp sesame seeds, toasted
Instructions:
- Bring a large pot of salted water to a boil.
- Add noodles and cook until al dente. Drain and rinse under cold running water.
- In a mixing bowl, combine tahini, soy sauce, rice vinegar, sesame oil, honey (or maple syrup), garlic, and ginger. Whisk until smooth.
- In the same pot (or a large bowl), add the cooked noodles and pour the sesame sauce over them. Toss to coat evenly.
- Add in julienned cucumber, sliced bell pepper, and grated carrots. Toss gently to combine.
- Dish noodles onto serving plates and top with chopped cilantro, sliced green onions, and toasted sesame seeds.
