Ingredients:

  • 8 oz (225 g) whole wheat spaghetti or soba noodles
  • 1/4 cup (60 ml) tahini
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp honey or maple syrup
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 1 medium cucumber, julienned
  • 1 red bell pepper, sliced
  • 2 carrots, grated or julienned
  • 1/4 cup chopped fresh cilantro
  • 2 green onions, sliced
  • 2 tbsp sesame seeds, toasted

Instructions:

  1. Bring a large pot of salted water to a boil.
  2. Add noodles and cook until al dente. Drain and rinse under cold running water.
  3. In a mixing bowl, combine tahini, soy sauce, rice vinegar, sesame oil, honey (or maple syrup), garlic, and ginger. Whisk until smooth.
  4. In the same pot (or a large bowl), add the cooked noodles and pour the sesame sauce over them. Toss to coat evenly.
  5. Add in julienned cucumber, sliced bell pepper, and grated carrots. Toss gently to combine.
  6. Dish noodles onto serving plates and top with chopped cilantro, sliced green onions, and toasted sesame seeds.
