Ingredients:

  • 1 cup (120g) shredded mozzarella cheese
  • 1 cup (120g) shredded Monterey Jack cheese
  • ½ cup (60g) crumbled feta cheese
  • 2 tablespoons (30ml) milk
  • 1 tablespoon (15ml) olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1-2 chipotle peppers in adobo sauce, finely chopped
  • ¼ cup (15g) fresh cilantro, chopped
  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In an oven-safe skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent (about 3-4 minutes). Stir in minced garlic and sauté for another minute until fragrant.
  3. In a mixing bowl, combine mozzarella, Monterey Jack, feta, and milk. Mix well. Add the sautéed onion and garlic, chopped chipotles, and cilantro to the cheese mixture. Season with salt and pepper.
  4. Spread the cheese mixture evenly in the skillet. Transfer to the oven and bake until bubbly and golden (about 10-12 minutes).
  5. Remove from the oven and let cool slightly. Garnish with extra cilantro if desired.
