Ingredients:
- 1 cup (120g) shredded mozzarella cheese
- 1 cup (120g) shredded Monterey Jack cheese
- ½ cup (60g) crumbled feta cheese
- 2 tablespoons (30ml) milk
- 1 tablespoon (15ml) olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1-2 chipotle peppers in adobo sauce, finely chopped
- ¼ cup (15g) fresh cilantro, chopped
- Salt and pepper, to taste
Instructions:
- Preheat the oven to 400°F (200°C).
- In an oven-safe skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent (about 3-4 minutes). Stir in minced garlic and sauté for another minute until fragrant.
- In a mixing bowl, combine mozzarella, Monterey Jack, feta, and milk. Mix well. Add the sautéed onion and garlic, chopped chipotles, and cilantro to the cheese mixture. Season with salt and pepper.
- Spread the cheese mixture evenly in the skillet. Transfer to the oven and bake until bubbly and golden (about 10-12 minutes).
- Remove from the oven and let cool slightly. Garnish with extra cilantro if desired.
