Ingredients:
- 2 cups Milk or Water
- 1 small pinch Fine Sea Salt
- 1 cup Old-Fashioned Rolled Oats
- 1/4 cup Natural Smooth Peanut Butter
- 1 tbsp Maple Syrup (or Honey)
- 1/2 tsp Vanilla Extract (Optional)
- 1 medium Banana (Sliced diagonally)
- 1 tsp Chia Seeds
- 1 tbsp Toasted Peanuts (Roughly chopped, unsalted)
- 1 tsp Extra Peanut Butter (For drizzling)
Instructions:
- Combine the milk (or water) and the pinch of sea salt in a medium heavy-bottomed saucepan.
- Place the saucepan over medium-high heat. Bring the liquid just to a gentle simmer—do not allow it to boil vigorously.
- Once simmering, stir in the rolled oats. Immediately reduce the heat to medium-low to maintain a gentle bubble.
- Cook for 7 to 10 minutes, stirring frequently (every 30 seconds is ideal) to prevent the bottom from catching and ensuring maximum creaminess. The oats are ready when the liquid is mostly absorbed, and the mixture is thick but still pourable.
- Take the saucepan off the hob.
- While the oatmeal is still piping hot, quickly stir in the 1/4 cup of peanut butter, the maple syrup, and the vanilla extract (if using).
- Stir vigorously until the peanut butter is completely melted and smoothly incorporated into the oatmeal, creating a uniform, creamy colour. This should take about 30 seconds.
- Divide the oatmeal evenly between the two serving bowls.
- Top each bowl immediately with the banana slices, chia seeds, and chopped peanuts.
- Gently melt the extra teaspoon of peanut butter and drizzle over the top of the bowls. Serve immediately.
