Ingredients:

  • 1 cup (240g) whole milk ricotta cheese
  • 1 large egg
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh thyme (or 1 teaspoon dried)
  • 1 tablespoon fresh rosemary (or 1 teaspoon dried)
  • 2 tablespoons honey
  • Fresh crusty bread or crackers
  • Extra fresh herbs for garnish (optional)

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine ricotta cheese, egg, lemon juice, lemon zest, salt, and pepper. Whisk until smooth and creamy—aim for no lumps.
  3. Fold in fresh thyme and rosemary into the ricotta mixture.
  4. Pour the mixture into a greased baking dish or evenly distribute into ramekins.
  5. Place in the preheated oven and bake for 25 minutes, or until the top is lightly browned and set.
  6. Remove from the oven and drizzle with honey while still warm.
  7. Garnish with extra fresh herbs if desired, and serve with crusty bread or crackers.
