Ingredients:
- 1 cup (240g) whole milk ricotta cheese
- 1 large egg
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh thyme (or 1 teaspoon dried)
- 1 tablespoon fresh rosemary (or 1 teaspoon dried)
- 2 tablespoons honey
- Fresh crusty bread or crackers
- Extra fresh herbs for garnish (optional)
Instructions:
- Preheat oven to 375°F (190°C).
- In a mixing bowl, combine ricotta cheese, egg, lemon juice, lemon zest, salt, and pepper. Whisk until smooth and creamy—aim for no lumps.
- Fold in fresh thyme and rosemary into the ricotta mixture.
- Pour the mixture into a greased baking dish or evenly distribute into ramekins.
- Place in the preheated oven and bake for 25 minutes, or until the top is lightly browned and set.
- Remove from the oven and drizzle with honey while still warm.
- Garnish with extra fresh herbs if desired, and serve with crusty bread or crackers.
