- 12 ounces (340g) cooked chicken, shredded or diced
- 1 ripe avocado, pitted and mashed
- 2 tablespoons (30ml) red onion, finely diced
- 1 tablespoon (15ml) fresh cilantro, chopped
- 1 tablespoon (15ml) fresh lime juice
- 1 teaspoon (5ml) Dijon mustard
- ½ teaspoon (2.5ml) garlic powder
- ¼ teaspoon (1.25ml) salt, or to taste
- ⅛ teaspoon (0.6ml) black pepper, or to taste
- 6-8 large lettuce leaves (butter lettuce, romaine, or iceberg work well)
Instructions:
- Shred or dice the cooked chicken into bite-sized pieces.
- In a mixing bowl, mash the avocado with a fork until smooth and creamy.
- Add the shredded chicken, red onion, cilantro, lime juice, Dijon mustard, garlic powder, salt, and pepper to the bowl with the mashed avocado.
- Stir all ingredients together until thoroughly combined and the chicken is evenly coated in the avocado mixture.
- Spoon the chicken salad mixture into the lettuce leaves.
