Ingredients:

  • 12 ounces (340g) cooked chicken, shredded or diced
  • 1 ripe avocado, pitted and mashed
  • 2 tablespoons (30ml) red onion, finely diced
  • 1 tablespoon (15ml) fresh cilantro, chopped
  • 1 tablespoon (15ml) fresh lime juice
  • 1 teaspoon (5ml) Dijon mustard
  • ½ teaspoon (2.5ml) garlic powder
  • ¼ teaspoon (1.25ml) salt, or to taste
  • ⅛ teaspoon (0.6ml) black pepper, or to taste
  • 6-8 large lettuce leaves (butter lettuce, romaine, or iceberg work well)

Instructions:

  1. Shred or dice the cooked chicken into bite-sized pieces.
  2. In a mixing bowl, mash the avocado with a fork until smooth and creamy.
  3. Add the shredded chicken, red onion, cilantro, lime juice, Dijon mustard, garlic powder, salt, and pepper to the bowl with the mashed avocado.
  4. Stir all ingredients together until thoroughly combined and the chicken is evenly coated in the avocado mixture.
  5. Spoon the chicken salad mixture into the lettuce leaves.
