Ingredients:
- 1 sheet (14.1 oz/400g) frozen puff pastry, thawed
- 8 oz (225g) brie cheese, cut into 24 small cubes
- 1/2 cup (120ml) whole berry cranberry sauce
- 1 large egg
- 1 tbsp water
- 1/4 cup (30g) all-purpose flour
- 1/4 cup (50g) packed light brown sugar
- 1/4 cup (55g) cold unsalted butter, cut into small cubes
- 1/2 cup (50g) chopped pecans
- 1/4 teaspoon ground cinnamon
- Pinch of salt
Instructions:
- Prepare the Pecan Crumble: Combine flour, brown sugar, cinnamon, and salt in a food processor. Pulse until combined. Add cold butter and pulse until mixture resembles coarse crumbs. Stir in chopped pecans. Chill for 15 minutes.
- Preheat and Prep: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Prepare the Puff Pastry: Gently unfold the thawed puff pastry sheet on a lightly floured surface. Roll it out slightly to even it out.
- Cut the Pastry: Use a 1 1/2-inch round cookie cutter to cut out 24 circles.
- Assemble the Bites: Place the pastry circles on the prepared baking sheet. Top each circle with a cube of brie, a small dollop of cranberry sauce (about 1/2 teaspoon), and a generous pinch of pecan crumble.
- Egg Wash: In a small bowl, whisk together the egg and water. Brush the edges of each pastry circle with the egg wash.
- Bake: Bake for 15-20 minutes, or until the pastry is golden brown and the brie is melted and bubbly. Watch closely to prevent the pecan crumble from burning.
- Cool and Serve: Let the bites cool on the baking sheet for a few minutes before transferring them to a serving platter. Serve warm.
