Ingredients:

  • 1 lb boneless, skinless chicken breasts
  • 1 packet ranch seasoning mix
  • 8 oz cream cheese, softened
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • 8 oz penne pasta
  • Salt, for boiling water
  • Chopped green onions, for garnish (optional)
  • Fresh parsley, for garnish (optional)

Instructions:

  1. Boil salted water in a large pot.
  2. Add penne pasta; cook according to package instructions until al dente, then drain.
  3. In a large skillet, add the chicken breasts and chicken broth. Season with ranch seasoning.
  4. Cook over medium heat until chicken is cooked through, about 15-18 minutes.
  5. Remove chicken from skillet and shred using two forks.
  6. Return shredded chicken to the skillet. Add softened cream cheese and shredded cheddar. Stir until creamy.
  7. Add the cooked penne to the skillet and mix until coated evenly with the creamy chicken sauce.
  8. Spoon into bowls and top with extra cheese, green onions, and parsley if desired.
