Ingredients:
- 1 lb boneless, skinless chicken breasts
- 1 packet ranch seasoning mix
- 8 oz cream cheese, softened
- 1 cup chicken broth
- 1 cup shredded cheddar cheese (plus extra for topping)
- 8 oz penne pasta
- Salt, for boiling water
- Chopped green onions, for garnish (optional)
- Fresh parsley, for garnish (optional)
Instructions:
- Boil salted water in a large pot.
- Add penne pasta; cook according to package instructions until al dente, then drain.
- In a large skillet, add the chicken breasts and chicken broth. Season with ranch seasoning.
- Cook over medium heat until chicken is cooked through, about 15-18 minutes.
- Remove chicken from skillet and shred using two forks.
- Return shredded chicken to the skillet. Add softened cream cheese and shredded cheddar. Stir until creamy.
- Add the cooked penne to the skillet and mix until coated evenly with the creamy chicken sauce.
- Spoon into bowls and top with extra cheese, green onions, and parsley if desired.
