Ingredients:

  • 1 cup (225g) Cottage Cheese, low-fat or full-fat
  • 2 tablespoons (32g) Peanut Butter, creamy or crunchy (natural peanut butter recommended)
  • Optional Toppings: 1 tablespoon (15ml) Honey or Maple Syrup (or sugar substitute, to taste)
  • Optional Toppings: 1/4 teaspoon Ground Cinnamon
  • Optional Toppings: 1 tablespoon Chia Seeds
  • Optional Toppings: 1/4 cup Berries (fresh or frozen)
  • Optional Toppings: 1 small baked sweet potato

Instructions:

  1. In a small bowl, combine the cottage cheese and peanut butter.
  2. Stir well until the peanut butter is evenly distributed throughout the cottage cheese.
  3. If desired, add honey or maple syrup to sweeten, and stir to combine.
  4. Sprinkle with cinnamon, chia seeds, and berries, or serve over a warm baked sweet potato.
  5. Enjoy immediately.
