Ingredients:
- 2 cups (480 ml) plain yogurt, full-fat or low-fat
- 1 medium cucumber (about 8 oz / 225g), peeled, seeded, and finely grated
- 1/4 cup (60 ml) finely chopped fresh cilantro (coriander)
- 1/4 cup (60 ml) finely chopped fresh mint
- 1/2 teaspoon (2.5 ml) ground cumin
- 1/4 teaspoon (1.25 ml) salt, or to taste
- 1/8 teaspoon (0.6 ml) black pepper, or to taste
- 1 tablespoon (15 ml) fresh lemon juice (optional)
Instructions:
- Peel, seed, and grate or finely dice the cucumber. If grating, squeeze out excess moisture using a clean tea towel.
- In a mixing bowl, combine the yogurt, cucumber, cilantro, mint, cumin, salt, and pepper.
- Gently mix all the ingredients until well combined.
- Taste and adjust the seasoning as needed. Add more salt, pepper, or cumin to your liking. Stir in lemon juice.
- For the best flavor, cover and chill in the refrigerator for at least 15-30 minutes before serving.
