Ingredients:

  • 2 cups (480 ml) plain yogurt, full-fat or low-fat
  • 1 medium cucumber (about 8 oz / 225g), peeled, seeded, and finely grated
  • 1/4 cup (60 ml) finely chopped fresh cilantro (coriander)
  • 1/4 cup (60 ml) finely chopped fresh mint
  • 1/2 teaspoon (2.5 ml) ground cumin
  • 1/4 teaspoon (1.25 ml) salt, or to taste
  • 1/8 teaspoon (0.6 ml) black pepper, or to taste
  • 1 tablespoon (15 ml) fresh lemon juice (optional)

Instructions:

  1. Peel, seed, and grate or finely dice the cucumber. If grating, squeeze out excess moisture using a clean tea towel.
  2. In a mixing bowl, combine the yogurt, cucumber, cilantro, mint, cumin, salt, and pepper.
  3. Gently mix all the ingredients until well combined.
  4. Taste and adjust the seasoning as needed. Add more salt, pepper, or cumin to your liking. Stir in lemon juice.
  5. For the best flavor, cover and chill in the refrigerator for at least 15-30 minutes before serving.
