Ingredients:

  • 1 lb ground turkey (93% lean)
  • 1 tbsp avocado oil
  • 1 tsp kosher salt
  • 0.5 tsp cracked black pepper
  • 1 tsp Worcestershire sauce
  • 2 cloves garlic, minced
  • 0.5 small yellow onion, finely diced

Instructions:

  1. Place a heavy-bottomed skillet (cast iron or stainless steel) over medium-high heat. Add the avocado oil and wait until it shimmers and begins to wisp smoke.
  2. Pat the ground turkey dry with paper towels to remove surface moisture, which prevents steaming.
  3. Add the turkey to the pan in one large disk, like a giant burger patty. Press down firmly with a stiff metal spatula to maximize surface contact.
  4. Let the turkey sear undisturbed for 3 minutes until a deep, mahogany-colored crust forms on the bottom.
  5. Flip the turkey in large chunks. Use the spatula to break the meat into your preferred crumble size.
  6. Add the diced onion, minced garlic, salt, and pepper. The moisture from the onions will help deglaze the browned bits (fond) from the pan.
  7. Stir in the Worcestershire sauce. Continue cooking for 4-5 minutes until the turkey is fully cooked through and the aromatics are softened.
