Ingredients:

  • 2 cups (300g) canned red beans, drained and rinsed
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon (15ml) vegetable oil
  • 1 teaspoon (5g) smoked paprika
  • 1 teaspoon (5g) ground cumin
  • ½ teaspoon (2.5g) cayenne pepper (adjust to taste)
  • 2 cups (480ml) vegetable or chicken broth
  • Salt and pepper to taste
  • Optional: 1 cup (150g) diced cooked smoked sausage

Instructions:

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the diced onion and bell pepper. Sauté until soft, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the smoked paprika, cumin, and cayenne pepper. Cook until fragrant, about 30 seconds.
  5. Incorporate the red beans and broth. Stir to combine.
  6. If using, add the smoked sausage and season with salt and pepper.
  7. Bring to a simmer and reduce heat to low. Cook for 20 minutes, stirring occasionally.
  8. Taste and adjust seasoning as desired before serving.
