Ingredients:
- 2 cups (300g) canned red beans, drained and rinsed
- 1 medium onion, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 1 tablespoon (15ml) vegetable oil
- 1 teaspoon (5g) smoked paprika
- 1 teaspoon (5g) ground cumin
- ½ teaspoon (2.5g) cayenne pepper (adjust to taste)
- 2 cups (480ml) vegetable or chicken broth
- Salt and pepper to taste
- Optional: 1 cup (150g) diced cooked smoked sausage
Instructions:
- Heat the vegetable oil in a large skillet over medium heat.
- Add the diced onion and bell pepper. Sauté until soft, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Add the smoked paprika, cumin, and cayenne pepper. Cook until fragrant, about 30 seconds.
- Incorporate the red beans and broth. Stir to combine.
- If using, add the smoked sausage and season with salt and pepper.
- Bring to a simmer and reduce heat to low. Cook for 20 minutes, stirring occasionally.
- Taste and adjust seasoning as desired before serving.
