Ingredients:

  • 1 box (15.25 oz / 432g) Confetti Cake Mix
  • ½ cup (1 stick / 113g) unsalted butter, melted
  • 2 large eggs
  • ½ cup (120ml) milk
  • 1 teaspoon vanilla extract
  • ¼ cup sprinkles (optional)
  • ½ cup white chocolate chips or chunks (optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on two sides.
  2. In a large mixing bowl, whisk together the melted butter, eggs, milk, and vanilla extract until well combined.
  3. Pour the confetti cake mix into the wet ingredients. Gently fold until just combined. Be careful not to overmix.
  4. If using, gently fold in the extra sprinkles and white chocolate chips.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with moist crumbs attached. Avoid overbaking for fudgy blondies.
  7. Let the blondies cool completely in the pan before lifting them out using the parchment paper overhang. Cut into 16 squares.
