Ingredients:

  • 1 lb lean ground beef
  • 2 tbsp olive oil
  • 3 tbsp taco seasoning
  • 1 cup plain Greek yogurt
  • 1/2 cup tomato sauce
  • 1/4 cup fresh lime juice
  • 1/2 cup chilled beef bone broth
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup frozen corn, thawed
  • 1/2 cup red onion, finely diced
  • 1/4 cup fresh cilantro, chopped

Instructions:

  1. Heat olive oil in a skillet over medium-high heat. Add the ground beef and cook until fully browned. Stir in the taco seasoning during the last 2 minutes of cooking to toast the spices. Remove from heat and let the beef cool completely to room temperature.
  2. In a blender or mixing bowl, combine the Greek yogurt, tomato sauce, lime juice, chilled broth, garlic powder, and smoked paprika. Process until the mixture is a uniform, pale orange hue and completely smooth.
  3. In a large container, fold the cooled ground beef, black beans, corn, and diced red onion into the creamy base. Stir in the fresh cilantro.
  4. Cover tightly and refrigerate for at least 2 hours to allow the flavors to marry and the temperature to stabilize.
