Ingredients:
- 1 lb lean ground beef
- 2 tbsp olive oil
- 3 tbsp taco seasoning
- 1 cup plain Greek yogurt
- 1/2 cup tomato sauce
- 1/4 cup fresh lime juice
- 1/2 cup chilled beef bone broth
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup frozen corn, thawed
- 1/2 cup red onion, finely diced
- 1/4 cup fresh cilantro, chopped
Instructions:
- Heat olive oil in a skillet over medium-high heat. Add the ground beef and cook until fully browned. Stir in the taco seasoning during the last 2 minutes of cooking to toast the spices. Remove from heat and let the beef cool completely to room temperature.
- In a blender or mixing bowl, combine the Greek yogurt, tomato sauce, lime juice, chilled broth, garlic powder, and smoked paprika. Process until the mixture is a uniform, pale orange hue and completely smooth.
- In a large container, fold the cooled ground beef, black beans, corn, and diced red onion into the creamy base. Stir in the fresh cilantro.
- Cover tightly and refrigerate for at least 2 hours to allow the flavors to marry and the temperature to stabilize.
