Ingredients:

  • 1 cup jasmine rice (185g)
  • 1 cup coconut milk (240ml)
  • 1/2 cup water (120ml)
  • 1 teaspoon salt (5g)
  • 1 tablespoon sugar (12g) - (optional)
  • Fresh cilantro or parsley (for garnish, optional)

Instructions:

  1. Rinse the jasmine rice under cool water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice, coconut milk, water, salt, and sugar (if using).
  3. Heat the mixture over medium-high heat until it begins to boil.
  4. Once boiling, reduce the heat to low. Cover the saucepan with a lid and let it simmer for 15-18 minutes until the rice absorbs the liquid.
  5. After cooking, remove the saucepan from heat. Let it sit covered for 5 minutes. Then, use a fork to fluff the rice gently.
  6. Garnish with freshly chopped cilantro or parsley if desired. Serve warm.
