Ingredients:
- 3 lbs Yukon Gold potatoes, peeled and cut into 3/4-inch cubes
- 2 tbsp Apple Cider Vinegar
- 1 tbsp Kosher Salt
- 1 cup High-quality Mayonnaise
- 2 tbsp Yellow Mustard
- 1 tbsp Dijon Mustard
- 1/2 tsp Smoked Paprika
- 1/2 tsp Freshly cracked black pepper
- 4 Hard-boiled eggs, peeled and chopped
- 3 stalks Celery, finely diced
- 1/2 small Red onion, minced
- 1/4 cup Sweet pickle relish
Instructions:
- Place 3 lbs Yukon Gold potatoes, peeled and cut into 3/4 inch cubes, in a large stockpot and cover with at least one inch of cold water. Add 1 tablespoon of kosher salt. Note: Starting with cold water ensures the potatoes cook evenly from the center out.
- Bring the water to a boil over high heat, then immediately reduce to a simmer. Cook for 8–12 minutes until the potatoes are fork tender but not falling apart.
- Drain potatoes thoroughly in a colander. While steaming hot, transfer to a large bowl and sprinkle with 2 tablespoons of apple cider vinegar. Toss gently and let sit for 10–15 minutes until the vinegar is fully absorbed.
- In a separate small bowl, whisk together 1 cup mayonnaise, 2 tablespoons yellow mustard, 1 tablespoon Dijon mustard, 1/2 teaspoon smoked paprika, and 1/2 teaspoon black pepper.
- Add 4 chopped hard boiled eggs, 3 stalks diced celery, 1/2 minced red onion, and 1/4 cup sweet pickle relish to the potatoes. Note: Adding these now ensures the crunch of the celery stays fresh.
- Pour the dressing over the potato mixture. Use a silicone spatula to gently fold until every cube is evenly coated.
- Cover and refrigerate for at least 1 hours until the flavors have melded and the salad is chilled. Taking that 15 minute break while the potatoes absorb the vinegar is the most important part of the entire process. If you skip it and pour the mayo on immediately, the heat will melt the mayo and it will just slide right off the potato.
