Ingredients:
- 2 cups (250g) all-purpose flour
- 1 large egg
- 1/2 cup (120ml) sour cream
- 1/4 cup (60ml) water
- 1/2 teaspoon salt
- 2 cups (400g) potatoes, peeled and cubed
- 1 cup (200g) cottage cheese or farmer’s cheese
- 1/2 cup (50g) shredded cheddar cheese
- 1 small onion, finely chopped
- 2 tablespoons (30g) unsalted butter
- Salt and pepper, to taste
Instructions:
- Whisk flour and salt in a bowl.
- Create a well in the center and add the egg and sour cream.
- Mix until a soft dough forms, adding water as needed.
- Knead on a floured surface until smooth, then cover and let rest.
- Boil potatoes until tender, then drain and mash in a bowl.
- In a pan, sauté onions in butter until golden.
- Combine mashed potatoes, sautéed onions, and cheeses in a bowl, season with salt and pepper.
- Roll out dough to 1/8-inch thickness on a floured surface.
- Cut into circles (about 3 inches in diameter).
- Place a spoonful of filling in the center of each circle, then fold and seal the edges tightly.
- Bring a large pot of salted water to a boil.
- Drop in pierogi in batches, boiling until they float (3-5 minutes).
- Remove with a slotted spoon and drain well.
- In a pan, heat butter and sauté cooked pierogi until golden brown on each side. Serve immediately.
