Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 large egg
  • 1/2 cup (120ml) sour cream
  • 1/4 cup (60ml) water
  • 1/2 teaspoon salt
  • 2 cups (400g) potatoes, peeled and cubed
  • 1 cup (200g) cottage cheese or farmer’s cheese
  • 1/2 cup (50g) shredded cheddar cheese
  • 1 small onion, finely chopped
  • 2 tablespoons (30g) unsalted butter
  • Salt and pepper, to taste

Instructions:

  1. Whisk flour and salt in a bowl.
  2. Create a well in the center and add the egg and sour cream.
  3. Mix until a soft dough forms, adding water as needed.
  4. Knead on a floured surface until smooth, then cover and let rest.
  5. Boil potatoes until tender, then drain and mash in a bowl.
  6. In a pan, sauté onions in butter until golden.
  7. Combine mashed potatoes, sautéed onions, and cheeses in a bowl, season with salt and pepper.
  8. Roll out dough to 1/8-inch thickness on a floured surface.
  9. Cut into circles (about 3 inches in diameter).
  10. Place a spoonful of filling in the center of each circle, then fold and seal the edges tightly.
  11. Bring a large pot of salted water to a boil.
  12. Drop in pierogi in batches, boiling until they float (3-5 minutes).
  13. Remove with a slotted spoon and drain well.
  14. In a pan, heat butter and sauté cooked pierogi until golden brown on each side. Serve immediately.
