Ingredients:

  • 6 cups fresh peaches, peeled and sliced
  • 1 tbsp lemon juice
  • 1 1/4 cups granulated sugar
  • 1 tbsp cornstarch
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup + 2 tbsp cold butter, cubed
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 2 tsp turbinado sugar

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  2. Peel and slice the peaches. Set aside.
  3. In a bowl, combine sugar, cornstarch, cinnamon, and nutmeg. In a separate bowl, gently toss the peaches with lemon juice and the sugar mixture.
  4. Pour the peach mixture into the prepared baking dish.
  5. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  6. Using a pastry blender or your fingers, cut the cold butter into the dry ingredients until the mixture resembles coarse crumbs.
  7. Combine vanilla extract and buttermilk. Add to flour mixture and stir just until combined. Do not overmix.
  8. Drop spoonfuls of the cobbler topping evenly over the peach filling.
  9. Sprinkle turbinado sugar over the topping. Bake for 40 minutes, or until the topping is golden brown and the filling is bubbling.
  10. Let cool for 25-30 minutes before serving. This allows the filling to thicken.
