Ingredients:
- 6 cups fresh peaches, peeled and sliced
- 1 tbsp lemon juice
- 1 1/4 cups granulated sugar
- 1 tbsp cornstarch
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup + 2 tbsp cold butter, cubed
- 1 tsp vanilla extract
- 1 cup buttermilk
- 2 tsp turbinado sugar
Instructions:
- Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
- Peel and slice the peaches. Set aside.
- In a bowl, combine sugar, cornstarch, cinnamon, and nutmeg. In a separate bowl, gently toss the peaches with lemon juice and the sugar mixture.
- Pour the peach mixture into the prepared baking dish.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Using a pastry blender or your fingers, cut the cold butter into the dry ingredients until the mixture resembles coarse crumbs.
- Combine vanilla extract and buttermilk. Add to flour mixture and stir just until combined. Do not overmix.
- Drop spoonfuls of the cobbler topping evenly over the peach filling.
- Sprinkle turbinado sugar over the topping. Bake for 40 minutes, or until the topping is golden brown and the filling is bubbling.
- Let cool for 25-30 minutes before serving. This allows the filling to thicken.
