Ingredients:
- 1.5 lbs (680g) boneless pork shoulder or chicken thighs (or a mix)
- 4 tablespoons olive oil (60ml)
- 2 cloves garlic, minced
- 2 teaspoons dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 1 tablespoon red wine vinegar (15ml)
- 1 cup (240g) plain Greek yogurt
- 1 medium cucumber, grated and drained
- 2 cloves garlic, minced
- 1 tablespoon olive oil (15ml)
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 1 tablespoon lemon juice (15ml)
- Salt and pepper to taste
- 4 large pita bread or flatbreads
- 1 large tomato, sliced
- 1 small red onion, thinly sliced
- 1 cup shredded lettuce
- Optional: Feta cheese, sliced olives
Instructions:
- In a bowl, combine olive oil, garlic, oregano, cumin, salt, pepper, paprika, and vinegar.
- Cut the pork or chicken into thin strips and coat with marinade. Cover and refrigerate for at least 1 hour.
- In a bowl, mix together Greek yogurt, grated cucumber, garlic, olive oil, dill, lemon juice, and season with salt and pepper. Set aside.
- Preheat the grill or grill pan over medium heat. Cook marinated meat for about 5-7 minutes on each side, until fully cooked and slightly charred.
- Lightly toast the pita bread on the grill or in a skillet for a few seconds on each side.
- Place the cooked meat in the warm pita, add tzatziki sauce, sliced tomatoes, onions, and lettuce. Optional: sprinkle with feta cheese and olives.
- Fold the pita and enjoy your homemade gyros!
