Ingredients:

  • 1.5 lbs (680g) boneless pork shoulder or chicken thighs (or a mix)
  • 4 tablespoons olive oil (60ml)
  • 2 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon red wine vinegar (15ml)
  • 1 cup (240g) plain Greek yogurt
  • 1 medium cucumber, grated and drained
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil (15ml)
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 tablespoon lemon juice (15ml)
  • Salt and pepper to taste
  • 4 large pita bread or flatbreads
  • 1 large tomato, sliced
  • 1 small red onion, thinly sliced
  • 1 cup shredded lettuce
  • Optional: Feta cheese, sliced olives

Instructions:

  1. In a bowl, combine olive oil, garlic, oregano, cumin, salt, pepper, paprika, and vinegar.
  2. Cut the pork or chicken into thin strips and coat with marinade. Cover and refrigerate for at least 1 hour.
  3. In a bowl, mix together Greek yogurt, grated cucumber, garlic, olive oil, dill, lemon juice, and season with salt and pepper. Set aside.
  4. Preheat the grill or grill pan over medium heat. Cook marinated meat for about 5-7 minutes on each side, until fully cooked and slightly charred.
  5. Lightly toast the pita bread on the grill or in a skillet for a few seconds on each side.
  6. Place the cooked meat in the warm pita, add tzatziki sauce, sliced tomatoes, onions, and lettuce. Optional: sprinkle with feta cheese and olives.
  7. Fold the pita and enjoy your homemade gyros!
