Ingredients:

  • 4 boneless, skinless chicken breasts (about 1.5 pounds or 680 grams)
  • 1 cup (120g) all-purpose flour
  • 2 large eggs
  • 1 cup (100g) breadcrumbs (preferably Italian-style)
  • 1/2 cup (50g) grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Vegetable oil for frying (about 1/2 cup or 120ml)
  • 2 cups (480ml) marinara sauce, homemade or store-bought
  • 1 1/2 cups (150g) shredded mozzarella cheese
  • Fresh basil leaves, for garnish

Instructions:

  1. Pound chicken breasts to an even thickness, about 1/2 inch. Season both sides with salt and pepper.
  2. In one shallow bowl, place flour; in another, whisk eggs; in a third, combine breadcrumbs, Parmesan, garlic powder, and Italian seasoning.
  3. Coat each chicken breast in flour, then dip in egg, and finally coat with breadcrumb mixture. Chill for 30 minutes.
  4. Heat vegetable oil in a skillet over medium heat. Fry chicken until golden brown on each side, about 4-5 minutes per side. Transfer to a paper towel-lined plate.
  5. Preheat oven to 375°F (190°C). In a baking dish, layer marinara sauce at the bottom. Place fried chicken on top, then spoon more marinara sauce and sprinkle with mozzarella cheese.
  6. Bake for 20-25 minutes, or until cheese is bubbly and golden. Use a meat thermometer to ensure chicken reaches 165°F (75°C).
  7. Garnish with fresh basil leaves before serving.
