Ingredients:
- 4 boneless, skinless chicken breasts (about 1.5 pounds or 680 grams)
- 1 cup (120g) all-purpose flour
- 2 large eggs
- 1 cup (100g) breadcrumbs (preferably Italian-style)
- 1/2 cup (50g) grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Vegetable oil for frying (about 1/2 cup or 120ml)
- 2 cups (480ml) marinara sauce, homemade or store-bought
- 1 1/2 cups (150g) shredded mozzarella cheese
- Fresh basil leaves, for garnish
Instructions:
- Pound chicken breasts to an even thickness, about 1/2 inch. Season both sides with salt and pepper.
- In one shallow bowl, place flour; in another, whisk eggs; in a third, combine breadcrumbs, Parmesan, garlic powder, and Italian seasoning.
- Coat each chicken breast in flour, then dip in egg, and finally coat with breadcrumb mixture. Chill for 30 minutes.
- Heat vegetable oil in a skillet over medium heat. Fry chicken until golden brown on each side, about 4-5 minutes per side. Transfer to a paper towel-lined plate.
- Preheat oven to 375°F (190°C). In a baking dish, layer marinara sauce at the bottom. Place fried chicken on top, then spoon more marinara sauce and sprinkle with mozzarella cheese.
- Bake for 20-25 minutes, or until cheese is bubbly and golden. Use a meat thermometer to ensure chicken reaches 165°F (75°C).
- Garnish with fresh basil leaves before serving.
